April Davis, PhD, MS, RDN, ACSM-CEP

Dr. April Davis is an associate professor in the department of Nutrition and Exercise Physiology (NEP) in the Elson S. Floyd College of Medicine on the WSU Spokane Health Sciences Spokane campus. April is the program director for the Master of Science Coordinated Program in Dietetics, with a teaching emphasis on community nutrition and public health. Travel and discovering joy through cultural food traditions are two of April’s many passions.

Leijie (Eden) Qi MCN, RDN, CD

 

 

Eden is a dietitian with a nonprofit organization dedicated to supporting the health and well‑being of older adults. She works within the congregate meal program, where she provides nutrition education, individualized counseling, and practical guidance on healthy aging. Eden also works with partner meal sites to maintain strong food safety practices and ensure a safe, welcoming dining experience for seniors. Outside of work, Eden enjoys exploring new hiking trails and attending dog‑friendly events throughout the Seattle area, often accompanied by her energetic pup.

Molly Ketchum, RDN
 
 

 

Molly is Registered Dietitian Nutritionist with experience in clinical nutrition, nutrition counseling, long-term care, and nutrition programs for seniors. She enjoys advocating for the dietetics profession and connecting with other RDNs through participation in her local and state dietetic associations. In her free time, she loves cooking, crocheting, watercolor painting, and exploring new places with her family.

Rebecca Udman will graduate from Bastyr University in June 2026 with her Masters in Nutrition and Dietetics and will start her Dietetic Internship in September of 2026. Before returning to school to pursue this degree, she worked in corporate Human Resources in multiple industries and positions, including various Diversity and Inclusion roles. She is excited to serve on this board and looks forward to learning from everyone.

  Grace Scarborough Wheeler, RDN, is a Kirkland-based dietitian with a passion for public health and effective communication. Her work has focused on chronic kidney disease prevention, nutrition education, and community programming. She is currently pursuing a Master of Public Health. Grace values clarity, creativity, and collaboration in writing. As newsletter editor, she looks forward to sharing timely updates, amplifying member voices, and helping connect dietitians across Washington State.

Jennifer Okemah, MS, RD, BCADM, CDCES, CSSD

 

 

 

 

Jennifer has been a RDN since 2005 and a Certified Diabetes Care and Education Specialist (CDCES) since 2007. She has an additional certification as a Sports Specialist in Dietetics as well as being Board Certified in Advanced Diabetes Management. She owns a private practice with 4 locations in the Seattle area and has been providing telehealth services since 2018. Her company, Salute Nutrition, PLLC, incorporates the work of RDNs, A Registered Nurse Practitioner and a Personal Trainer. She has been a leader in her field in patient care, mentoring, serving as a preceptor, speaking, creating webinars, writing for nutrition and diabetes blogs as well as authoring scientific publications. When she is not in a clinic or office, she can be found on her bicycle training for a JDRF fundraising ride, paddleboarding year around on Lake Washington, hiking, traveling the world or just reading a book with a nice glass of wine.

Libby Reynolds-Johnson, RD, CD

 

 

 

Libby Johnson, MBA, RDN, CD is a Consulting Dietitian with S&S Nutrition Network, Inc., where she provides nutrition consulting services to post-acute and long-term care facilities throughout the states of Washington, Oregon and Alaska. She holds board positions with the Washington State Academy of Nutrition and Dietetics and is the current Chair of the Dietetics in Healthcare Communities (DHCC) DPG. Libby has a passion for ageing joyfully, spending her free time exploring the beautiful outdoors and wine country of the Pacific Northwest, cooking, reading, and living a life of gentle chaos with her two Golden Retrievers, barn cats and husband.

State Regulatory Specialist

Ebony White, RD, CD

  Ebony White is a second career Registered Dietitian Nutritionist who has a heart for nutrition during the pediatric years. She is involved in advocacy and promoting policy that will create a food system that strengthens food security, food justice and food sovereignty. Ebony studied Nutrition and Dietetics at Seattle Pacific University. She has previously served as coordinator for the Dr. Jennings Study Group with the National Organization of Blacks in Dietetics and Nutrition and as Diversity Chair on the Board of the Greater Seattle Dietetics Association. Ebony is a Pacific Northwest Native who enjoys live music, stand-up comedy, and spending quality time with her family.

Cathy Visser, MPH, RDN

 

Cathy is a HAES-informed, non-diet dietitian and owner of True for You Nutrition, LLC. She has an office in Olympia, WA and meets with clients via telehealth. She is passionate about helping clients learn to live the principles of Intuitive Eating, and she guides clients who are healing from eating disorders. Cathy is passionate about cooking and teaching others how to cook and eat for sound nutrition and pleasure.

Washington State Academy of Nutrition and Dietetics

Welcome to the 2026-2027 membership year! As we look ahead, my focus is on strengthening the organizational structure of our Academy, supporting modernization and innovation within the field of dietetics, and fostering a strong, connected community of nutrition professionals across Washington.

This year, we hope to create more opportunities for collaboration, professional engagement, and meaningful connections at both the state and district levels. As our profession continues to evolve locally and nationally, we remain committed to supporting our members through education, advocacy, and community.
