Understanding the Dietitian’s Role in Eating Disorder Treatment

Dietitians play a key role in recognizing and supporting individuals with eating disorders, regardless of the setting in which you are providing care. In this presentation, Nicole and Emily will walk you through how to identify common eating disorder behaviors, use screening tools to spot red flags, and understand when referral to specialized care is needed. They will also review 2 case studies to exemplify how dietitians can approach conversations about food and body image with compassion, curiosity, and evidence-based strategies.

    Emily Alderman

    As a dietitian, I hope to create a kind, compassionate, and non-judgmental space where clients can build confidence and find ease in their food choices. Some areas of interest of mine include: disordered eating/EDs, healing body image (especially for queer folks), exploring relationship with food, digestive issues (nausea, GERD, IBS, intolerances), picky/selective eating, and substance use history (as this often affects how one eats). I’m originally from Houston, TX and completed my bachelor’s, master’s, and dietetic internship at the University of Houston. My work experience has covered every level of care from outpatient through inpatient. In August 2025, I moved to Seattle to escape the heat and experience living independently. When I'm not in dietitian-mode, I love losing myself in a video game or a book for hours, showing off my cooking skills to family and friends, and connecting to my spirituality by practicing yoga or spending time outside.

    Nicole Thelan 

    My work as a dietitian is driven by my passion for helping people navigate the confusing world of nutrition. By respecting your lived experience, it is my goal to support you in improving your relationship with food and your body. I practice with an understanding that health can be achieved at any size, and strive to provide high quality, weight-neutral care to support you in developing sustainable approaches to eating. In addition to practicing as a dietitian at Experience Momentum, I’m also an adjunct faculty member at Seattle University where I teach Introductory Nutrition to undergraduate Kinesiology and Exercise Physiology students. I earned my undergraduate degree in Human Nutrition from Seattle Pacific University and completed my MS and DI at Oregon Health and Science University. When I’m not working, I love cooking, exploring new cuisines, and adventuring outdoors with my husband and our dog Steve!
