Position Description

SUMMARY:

Responsibilities include all functions to ensure smooth operation of the senior dining program and all foodservice operations. Manages procurement, receiving, storage, delivery and preparation of food and supplies. Assures HACCP criteria are met. Supervises cooks and delivery drivers. Plans menus to meet nutrition standards.

ESSENTIAL DUTIES AND RESPONSIBILITIES:

• SITE MANAGEMENT
o Serve as primary liaison between Homage and meal sites; meet with site directors and staff on a regular basis, maintain relationships to achieve positive outcomes
o Visit meal sites on a regular basis during meal times, perform site safety, sanitation and quality inspections, assure all program requirements are met
o Assist site staff and volunteers with participant registration procedure and assure that program standards are met
o Conduct site satisfaction and outcomes surveys at least annually

• STAFF MANAGEMENT
o Supervise senior dining staff and volunteers including recruitment participation, training, supervision, performance evaluation, and establishing goals and evaluation
o Develop and maintain staff relationships to achieve high staff morale, productivity, teamwork and retention
o Plan schedule for cooks, collaborate with nutrition manager for congregate delivery drivers schedule
o Schedule regular cooks’ meetings, coordinate new product testing, conduct technical in-services according to a pre-planned schedule
o Assist with training and recognition activities for meal site volunteers

• FOOD PRODUCTION
o Oversee procurement of all food and supplies to meet the nutritional and cost requirements of the program
o Assure distribution of foods to meal sites in a timely manner while assuring food safety
o Assure food and supplies inventory is completed on a regular basis
o Assure quality of food service, problem solve as needed
o Identify areas for process improvement and create training plan as appropriate
o Working with cooks and other staff, develop cycle menus and new recipes meeting nutritional standards
o Provide oversight for ethnic restaurants for the multicultural senior center meals, assure standards are met, assist with recruiting new restaurants and negotiating terms of service

• OFFICE FUNCTIONS
o Maintain timely and accurate records, including documentation of site visits
o Assist with selection and manage implementation of food service system software Utilize existing database to monitor meals ordered and served
o Complete monthly and quarterly reports as required
o Review and update Standard Operating Procedures and Desk Manual as needed, at least annually

• OTHER
o Explore new opportunities to increase revenue for the department, including fee-for-service
o Coordinate all contracted services and catering functions
o Assist with preceptoring dietetic interns
o Participate in internal and external committees as assigned, including the Snohomish Health District Food Committee
o Perform other tasks as assigned by the Nutrition Director

Minimum Qualifications

• Minimum two-year associate degree in culinary arts or related field
• Prefer Registered Dietitian Nutritionist (RDN), Registered Dietetic Technician (DTR)
• Relevant work experience that provides the required skill, knowledge, and abilities may be substituted for education.
• Minimum of 2 years in a progressively responsible food service position including food procurement and preparation, cost management, menu planning, and supervision
• Serv-safe (or equivalent) certified

• Intermediate computer skills that include Word, Excel and PowerPoint
• Able to work courteously and effectively with older persons, people with disabilities, community groups, volunteers, diverse populations from various ethnic groups, and a multi-disciplinary staff
• Valid CPR certificate
• Use of own vehicle often required to make site visits; mileage is reimbursed
• No at-fault accidents within the last 3 years
• Valid Washington State driver’s license and must carry own liability insurance and provide proof of insurance periodically as required
• Thorough knowledge of HACCP, Snohomish County and State Food Codes
• Sense of humor

ERGONOMIC REQUIREMENTS:

• Usual office conditions
• Usual conditions in food production facilities – walking, standing for up to one hour at a time, spending time in cold or freezing temperatures in walk in coolers/freezers, inspecting areas that are hot and/or humid (cooking bays and ware washing areas)
• Lifting up to 40 pounds.
• Drive own vehicle around the county to visit meal sites.
• Non-smoking environment.
• Standing for long periods at a time
